Ingredients
  • 8 ounces sugar free Chocolate Chips Lily's Sweets brand
  • ½ cup butter
  • ½ cup oil I used avocado oil
  • 2 eggs
  • 1 yolk
  • 2 tsp vanilla extract
  • 1 tsp chocolate liquid stevia
  • ¼ cup heavy cream
  • ¾ cup Sukrin Gold Natural Brown Sugar Sub or another sugar free sweetener
  • ¼ cup coconut flour
  • 1 scoop 1.2 oz ( 34g) chocolate protein powder
  • ¼ cup unsweetened cocoa powder
  • 2 tsp instant coffee
  • ½ tsp baking powder
  • ¼ tsp salt
  • optional: 1 cup sugar free chocolate chips
Instructions
  1. Melt the chocolate chips and butter over low heat on the stove or microwave for 1-2 minutes and stir until completely smooth. Set aside.
  2. Preheat oven to 350 degrees F.
  3. Add the oil, eggs, yolk, vanilla extract, stevia and cream to a stand mixer and mix until combined.
  4. Slowly pour in the melted chocolate while the mixer is on low speed.
  5. Add the remaining ingredients and blend until combined.
  6. Stir in the optional chocolate chips if desired.
  7. Line an 8 by 8 pan with parchment paper or grease pan.
  8. Pour in batter and bake for 25 minutes. It might look underdone but it's best to take it out before it looks done to achieve that gooey texture.
  9. Allow to cool 15 minutes before slicing.
  10. Best if enjoyed the same day although storing in the fridge, covered, will keep it well for the next day.

Ingredients
  • 1 large head cauliflower, cut into florets
  • 2 large eggs
  • ½ c. freshly grated Parmesan
  • 1 tbsp. cornstarch
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. sesame seeds
  • FOR THE BURGERS
  • 1 lb. ground beef
  • kosher salt
  • Freshly ground black pepper
  • vegetable oil
  • 4 slices cheddar
  • 4 tomato slices
  • Lettuce, for serving
Instructions
  1. Preheat oven to 425º and line two baking sheets with parchment paper. On a box grater or in a food processor, grate cauliflower and transfer to a large bowl. Microwave on high, 8 minutes.
  2. Drain thoroughly with paper towels or a cheesecloth until mixture is dry. Add eggs, Parmesan and cornstarch and season with salt and pepper. Mix until combined.
  3. Form cauliflower into eight 4” circles on prepared baking sheets. Sprinkle with sesame seeds and bake until golden, 22 to 25 minutes.
  4. Meanwhile, make burgers: Shape ground beef into four large patties. Season both sides of each patty with salt and pepper.
  5. In a large skillet, heat a very thin layer of vegetable oil. When the oil is hot, add the patties. Cook until cooked to your liking, about 4 minutes per side for medium.
  6. During the last minute of cooking, top each patty with a slice of cheese and cover the skillet with a tight-fitting lid to melt cheese.
  7. Serve burgers on cauliflower buns with tomato and lettuce.

  • 5 c. riced cauliflower (from about 1 large head)
  • 2 c. shredded Monterey Jack, divided
  • 1½ c. shredded cheddar, divided
  • 1 egg
  • ½ tsp. dried oregano
  • kosher salt
  • Freshly ground black pepper
  • 1 tbsp. extra-virgin olive oil, plus more for pan
  • ½ onion, chopped
  • 2 cloves garlic, minced
  • ¾ lb. ground beef
  • 1 tsp. chili powder
  • ½ tsp. ground cumin
  • 1¼ c. enchilada sauce
  • 1 c. canned black beans, drained
  • 1 c. canned corn, drained
  • 3 green onions, thinly sliced
  • Sour cream, for serving
Instructions
  1. Preheat oven to 425°. In a large microwave-safe bowl, microwave cauliflower until softened, about 4 minutes. Set aside until cool enough to handle, then use a clean kitchen towel to squeeze and ring out out excess moisture.
  2. Transfer steamed cauliflower to a clean bowl then add 1 cup shredded Monterey jack, ½ cup cheddar, egg, and dried oregano. Season with salt and pepper and mix until combined. Grease an ovenproof 10” skillet with olive oil, then press the cauliflower mixture into skillet. Bake until golden and dried out, about 20 minutes.
  3. Meanwhile, in a large skillet over medium heat, heat olive oil. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minutes. Add ground beef and cook, stirring often, until the beef is cooked through, about 6 minutes. Drain fat, then add chili powder, ground cumin, enchilada sauce, black beans and canned corn and bring mixture to a simmer. Season with salt and pepper then turn off heat.
  4. Spread mixture over baked cauliflower crust then top with remaining cheeses. Bake until the cheese has melted and the crust is crispy, about 15 minutes more.
  5. Garnish with green onions and serve warm.
