Ingredients
  • 1¾ c. shredded mozzarella
  • ¼ c. freshly grated Parmesan
  • 10 slices pepperoni
  • ½ tsp. oregano
  • pinch red pepper flakes
  • 1 tsp. chopped parsley
  • ½ c. marinara, heated, for dipping (optional)
Instructions
  1. In an 8” non-stick skillet over medium heat, add mozzarella in an even layer. Top with parmesan and pepperoni. Cover with a glass lid and cook until cheese is completely melted and edges are golden. Top with oregano and red pepper flakes and remove from heat.
  2. Let cool 3 minutes before sliding onto plate.
  3. Garnish with parsley and slice. Serve with marinara for dipping if using.

Ingredients
  • 1 large head cauliflower, cut into florets
  • 2 tbsp. extra-virgin olive oil, divided
  • 1 Medium Onion, Diced
  • 1 clove garlic, minced
  • fresh ginger, minced
  • 6 oz. frozen peas and carrots
  • 1 c. cooked, shredded chicken
  • 1 tbsp. chili paste
  • 2 large eggs
  • 5 tsp. soy sauce, divided
  • 1 tsp. sesame oil
  • 2 bunches green onions, chopped
Instructions
  1. Working in batches, place cauliflower into the bowl of a food processor fitted with the blade attachment. Process into small crumbles that resemble rice, then set aside.
  2. In a large skillet over medium heat, heat 1 tablespoon oil. Add onions and cook, 2 minutes, then add garlic, ginger, peas, and carrots and cook, 5 minutes more, stirring often. When vegetables have softened, add chicken and chili paste and cook, 2 minutes. Add riced cauliflower and cook 2 minutes, stirring often.
  3. Push rice mixture to one side of the pan and crack eggs into the open area of the skillet. Add one teaspoon soy sauce to eggs and scramble. Once cooked through, stir eggs into rice mixture. Add remaining 4 teaspoons soy sauce and stir.
  4. Continue cooking until everything is heated through and soft, 5 minutes. Remove from heat and drizzle with sesame oil. Sprinkle with green onions and serve.

  • 1 tbsp. extra-virgin olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. ground beef
  • 1 tbsp. ketchup
  • 1 tbsp. yellow mustard
  • 4 slicing tomatoes
  • Kosher salt
  • Freshly ground black pepepr
  • ⅔ c. shredded cheddar
  • ¼ c. shredded iceberg lettuce
  • 4 pickle coins
  • Sesame seeds, for garnish
Instructions
  1. In a medium skillet over medium heat, heat oil. Add onion and cook until tender, about 5 minutes, then stir in garlic. Add ground beef, breaking up the meat with a wooden spoon, and cook until the beef is no longer pink, about 6 minutes. Drain fat. Season with salt and pepper, then stir in ketchup and mustard.
  2. Flip tomatoes so they are stem-side down. Cut the tomatoes into six wedges, being careful to not cut completely through the tomato. Carefully spread open the wedges. Divide cooked ground beef evenly among the tomatoes, then top each with cheese and lettuce.
  3. Garnish with pickle coins and sesame seeds.
