Ingredients
  • 2 oz Vanilla Whey Protein
  • ¼ cup Almond Meal Flour
  • 3 tbsps Whole Grain Soy Flour
  • 1 tsp Baking Powder (Straight Phosphate, Double Acting)
  • 3 large Eggs (Whole)
  • ⅓ cup Large or Small Curd Creamed Cottage Cheese
Instructions
  1. Mix the protein powder (1oz is about 4 Tbsp), almond meal, soy flour and baking powder together. Whisk the eggs, then blend together with the cottage cheese (substitute cream cheese if cottage cheese is not on your accepted foods list).
  2. Heat a large nonstick skillet or griddle over medium heat. Lightly grease with butter or canola oil.
  3. Using about ¼ cup per pancake, drop batter onto the skillet. When bubbles begin to form in the middle of each pancake, turn over and cook another 2 minutes or until firm.
  4. Repeat, keeping pancakes warm in the oven.
Notes
Serve with almond butter or sugar-free pancake syrup. Garnish with toasted almonds, if desired.

  • 2 tbsps Canola Vegetable Oil
  • 2¼ lbs Beef Chuck (Shoulder Tender Medallion, Trimmed to 0" Fat)
  • 1 14.5 oz can Diced Tomato
  • 1 cup Beef Broth, Bouillon or Consomme
  • 2 cloves Garlic
  • 4 servings Chunky Medium Salsa
  • 2 tbsps Chili Powder
  • 1 tsp leaf Oregano
Instructions
  1. Cut beef into 1-inch cubes or purchase already cubed. Season the cubes with salt and freshly ground black pepper. Heat oil in a Dutch oven or large pot over medium heat until hot. Brown beef in batches. Return cooked beef and accumulated juices to Dutch oven.
  2. Stir in tomatoes, broth, garlic, salsa, chili powder and oregano. Bring to a boil; reduce heat to low. Cover tightly and simmer 1½ to 1¾ hours, until beef is tender.
  3. Serve with sour cream and green onions, if desired.

  • 3 c. riced broccoli
  • 1 large egg
  • 1½ c. shredded mozzarella
  • ¼ c. freshly grated Parmesan
  • 2 cloves garlic, minced
  • ½ tsp. dried oregano
  • Kosher salt
  • Freshly ground black pepper
  • Pinch crushed red pepper flakes (optional)
  • 2 tsp. freshly chopped parsley
  • Warmed marinara, for serving
Instructions
  1. Preheat oven to 425° and line a large baking sheet with parchment paper. Microwave riced broccoli for 1 minute to steam. Carefully ring out extra moisture from the broccoli using paper towel or cheese cloth.
  2. Transfer broccoli to a large bowl and add egg, 1 cup mozzarella, Parmesan, and garlic. Season with oregano, salt, and pepper. Transfer dough to baking sheet and shape into a thin, round crust.
  3. Bake until golden and dried out, 20 minutes. Top with with remaining ½ cup mozzarella and bake until cheese is melted and crust is crispy, 10 minutes more. Garnish with parsley and pepper flakes if using. Serve warm with marinara.
