Using a spiral slicer, cut carrots, zucchini and yellow squash into spaghetti spirals. Chop onion and red bell pepper.
Heat oil in a large skillet. Add onion, garlic and carrots. Cook until onions are translucent (approximately 5 mins.) Add zucchini, yellow squash, and bell pepper. Cook about 2 mins then add bruschetta and the eggs. Cook approximately 3 minutes until zucchini is tender.
