Ingredients
- 4 cups low-fat low-sodium chicken broth
- 4 tbsp white vinegar
- 2 tbsp soy sauce
- 1 tbsp crushed red pepper
- 2 tsp sesame oil
- 1 cup sliced mushrooms
- 1 cup thinly sliced carrot
- 2 tsp arrowroot
- 4 tsp water
Instructions
- In a stockpot, combine the broth, vinegar, soy sauce, crushed red pepper, and sesame oil. Bring to a boil, then simmer for 10 minutes.
- Add the mushrooms and carrots and simmer for 10 more minutes.
- Combine the arrowroot with the water. Add the soup and continue to cook for 5 minutes, until it thickens.
