Spinach Dip
Ingredients
- 1 10 oz package frozen spinach or broccoli, thawed
- 2 tbsp red wine vinegar
- 3 minced garlic cloves
- 1 cup low fat sour cream
- 1 tbsp fresh minced mint
- fresh ground pepper to taste
Instructions
- Drain the defrosted spinach and press out all the water until the spinach is very dry.
- Combine all the ingredients by hand.
- Refrigerate for 2 hours.
Notes
If you let the spinach defrost in the refrigerator, you can avoid spending time cooking it. You can also use this dip to top broiled salmon steaks.
