Ingredients
  • 1 medium carrot
  • 1 medium zucchini
  • 1 medium yellow squash
  • ½ onion
  • ½ red bell pepper
  • 1 tbsp peanut oil
  • 2 tbsp minced garlic
  • 1 tbsp roasted pepper bruschetta
  • 1 tbsp olive bruschetta
  • 2 eggs
Instructions
  1. Using a spiral slicer, cut carrots, zucchini and yellow squash into spaghetti spirals. Chop onion and red bell pepper.
  2. Heat oil in a large skillet. Add onion, garlic and carrots. Cook until onions are translucent (approximately 5 mins.) Add zucchini, yellow squash, and bell pepper. Cook about 2 mins then add bruschetta and the eggs. Cook approximately 3 minutes until zucchini is tender.
