Ingredients
- 1 medium carrot
- 1 medium zucchini
- 1 medium yellow squash
- ½ onion
- ½ red bell pepper
- 1 tbsp peanut oil
- 2 tbsp minced garlic
- 1 tbsp roasted pepper bruschetta
- 1 tbsp olive bruschetta
- 2 eggs
Instructions
- Using a spiral slicer, cut carrots, zucchini and yellow squash into spaghetti spirals. Chop onion and red bell pepper.
- Heat oil in a large skillet. Add onion, garlic and carrots. Cook until onions are translucent (approximately 5 mins.) Add zucchini, yellow squash, and bell pepper. Cook about 2 mins then add bruschetta and the eggs. Cook approximately 3 minutes until zucchini is tender.
