Cauliflower Chicken Bruschetta Sandwich
Serves: 4 sandwiches
Ingredients
- 1 head cauliflower
- 2 eggs
- ½ cup parmesan cheese
- Salt and pepper to taste
- 1 tbsp cornstarch
- Sesame seeds
- Dried onion flakes
- Olive bruschetta
- Red pepper bruschetta
- 8 slices chicken breast
Instructions
- Preheat oven to 425°.
- In a food processor, grate the cauliflower until riced. Microwave on high for 8 minutes then drain thoroughly with paper towels until completely dry.
- In a large bowl, combine the cauliflower, eggs, cheese, and cornstarch. Add salt and pepper and mix until combined.
- Form mixture into 8 buns and flatten on a cookie sheet covered in parchment paper. Sprinkle sesame seeds and onion flakes over the top of each bun. Bake for 22 minutes or until golden brown.
- For each sandwich spread olive bruschetta on one bun and red pepper bruschetta on another bun. Add two slices of chicken breasts to complete the sandwich.
