Ingredients
  • 1 large spaghetti squash
  • 1 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 4 slices bacon
  • 2 cloves garlic, minced
  • 1½ c. cherry tomatoes, halved
  • 2 c. baby spinach
  • ½ c. heavy cream
  • ⅓ c. grated Parmesan
  • Basil, for garnish
Instructions
  1. Preheat oven to 400 degrees F.
  2. Cut squash in half lengthwise. Rub all over with olive oil and season with salt and pepper. Place flesh side-down on baking sheet. Bake for 40-45 minutes, until the spaghetti squash is tender. Let cool until cool enough to handle, then use two forks to pull apart spaghetti squash flesh into fine noodle-like strings.
  3. Meanwhile, cook bacon in a medium skillet until crispy. Transfer to a paper towel-lined plate to drain.
  4. Pour off half the bacon fat and add garlic, tomatoes and spinach to the skillet. Season with salt and pepper. Add heavy cream and Parmesan and let simmer until slightly thickened. Add spaghetti squash and toss until fully coated. Crumble bacon over the squash and stir to combine. Garnish with basil.

Ingredients
  • 3 tbsp. extra-virgin olive oil, divided
  • 4 medium portobello mushrooms, stems and gills removed
  • 1 onion, sliced into half moons
  • 2 bell peppers, sliced
  • kosher salt
  • Freshly ground black pepper
  • 1 lb. sirloin
  • 4 slices provolone
  • chopped parsley
Instructions
  1. Preheat oven to 350°. On a large baking sheet, brush mushroom caps with 1 tablespoon olive oil and season with salt and pepper. Place stem side-up.
  2. In a large skillet over medium heat, heat 1 tablespoon olive oil. Add onion and peppers and season with salt and pepper. Cook, stirring often, until the vegetables are tender, about 5 minutes. Remove from heat.
  3. Add remaining olive oil to skillet and increase heat to medium-high. Season steak all over with salt and pepper and cook until the steak is seared on both sides, about 3 minutes. Turn off heat and return vegetable mixture to the pan.
  4. Spoon the steak mixture into mushroom caps then top with cheese. Bake until the peppers are tender and the cheese is melted, about 20 minutes.
  5. Garnish with parsley and serve warm.

  • 4 slices American cheese
  • 12 butterhead lettuce leaves
  • Sliced tomato
Instructions
  1. Make sauce: In a medium bowl, whisk together mayonnaise, yellow mustard, ketchup, pickle relish, apple cider vinegar, garlic powder, onion powder, paprika, and salt.
  2. Make burgers: Form ground beef into 4 patties; season both sides with salt and pepper. In a large skillet over medium-high heat, melt butter. Add patties and cook until burgers are seared on the bottom, about 4 minutes. Flip burgers and cook until cooked through to your liking (about 4 minutes for medium), adding cheese during the last minute of cooking.
  3. Assemble burgers: Place cheeseburgers on top of large lettuce leaves and drizzle with special sauce. Top with sliced tomato and another piece of lettuce.
