Ingredients
  • 3 tablespoons Extra Virgin Olive Oil
  • 1 medium (2-1/2" dia) Onions
  • 3 tsps Garlic
  • 8 oz Roasted Bell Peppers
  • 2 plum tomatoes Red Tomatoes
  • ¼ tsp Red or Cayenne Pepper
  • 6 tablespoons Unsalted Butter Stick
  • 12 large Eggs (Whole)
  • 5½ tbsps Basil
  • 6 oz boneless, cooked Fresh Ham
Instructions
  1. Heat oil in large heavy skillet over medium heat. Sauté diced onion 5 minutes, until softened; add minced garlic and cook 1 minute more.
  2. Add diced roasted peppers, diced tomatoes, and cayenne. Cover and cook 10 minutes, until vegetables are very soft, stirring occasionally.
  3. Uncover and simmer over medium heat until sauce is thick, about 10 minutes, stirring often. Season to taste with salt and pepper. (Mixture can be made up to 2 days ahead and reheated).
  4. In large bowl, beat eggs until blended. In large nonstick skillet, melt butter over low heat. Add eggs and basil. Cook, stirring constantly with rubber spatula, 12 minutes, until soft curds form and eggs are barely set.
  5. Add pepper mixture and ham; stir just until mixed.

  • 1 individual packet Sucralose Based Sweetener (Sugar Substitute)
  • 1 large Egg (Whole)
  • 2 tsps Baking Powder (Straight Phosphate, Double Acting)
  • ¼ tsp Salt
  • 1 cup Cream (Half & Half)
  • 3 servings Atkins Flour Mix
Instructions
  1. Use the Atkins recipe to make Atkins Flour Mix for this recipe. This recipe makes 5 waffles. Assuming your waffle iron makes 4 servings, use four-fifths of the batter and then make a single waffle with the remaining batter. Freeze extra waffles and just pop in the toaster before serving.
  2. In a large bowl, blend together 1 cup baking mix, baking powder, sugar substitute and salt.
  3. In another large bowl, mix the half-and-half and beaten egg.
  4. Add dry ingredients to the liquid ingredients and whisk batter until any lumps are removed. Don't overbeat.
  5. Let the mixture sit for at least 5 minutes to activate the baking powder.
  6. Heat the waffle iron and pour the batter in the center of the waffle iron.
  7. Close the top and cook waffles for about 1½ minutes or until golden brown.
  8. Repeat with last waffle.

Instructions
  1. This versatile low-carb flour mix is an important component of many of the recipes in Atkins' latest book: Atkins: Eat Right, Not Less. On shelves soon!
  2. Please note that you will need 5oz or ⅔ cup of the wheat gluten. Combine all ingredients, and mix thoroughly. Use immediately, or store in an airtight container in the refrigerator for up to 1 month. Makes about 3 cups, each serving is ⅓ cup.
  3. Note: It is not necessary to use vanilla flavored whey protein powder, unflavored is ideal but the vanilla will not contribute much flavor to the mix so if it is what you have on hand, use it.
